Great Grill Recipes for the Open Road!
Warm weather is here and camping season is in full swing, but your summer dinners at the campsite don’t always have to be burgers and hot dogs. Fire up your grill, grab some new ingredients and test out these unique grill recipes for life on the road.
Grilled Shrimp with Lemon Aioli
What You’ll Need:
- 1 pound extra large shrimp (peeled and deveined)
- 1 teaspoon lemon juice
- 2 teaspoons olive oil
- 1/2 cup mayonnaise
- 1 tablespoon tarragon
- 1 teaspoon paprika
- 1/2 teaspoon salt
Cooking Instructions:
- In a small bowl, stir the mayonnaise, lemon juice and tarragon together. Cover the bowl and chill it in the refrigerator for roughly 15 minutes.
- Preheat your grill on high and oil the grate lightly.
- Put the shrimp in a separate bowl and drizzle olive oil, paprika and salt over them. Stir the combination until the shrimp are fully coated.
- Grill the shrimp until they’re bright pink (about two minutes on each side).
- Serve the shrimp with your chilled aioli on the side.
Grilled Zucchini Boats
What You’ll Need:
- 2 medium zucchinis
- 1 slice white bread (torn into small pieces)
- 1 tablespoon black olives (minced)
- 1/4 cup bacon bits
- 1 jalapeno pepper (minced)
- 3 tablespoons green chilies (diced)
- 1/4 cup onion (minced)
- 1/4 cup tomato (chopped)
- 1 pinch dried basil
- 1/4 cup tomato (chopped)
- seasoned salt and pepper to taste
Cooking Instructions:
- Place the zucchinis in a pot and fill with water until the zucchinis are fully covered. Bring the pot to a boil and cook for roughly five minutes. Allow the zucchinis to cool, then cut them in half lengthwise.
- Scoop the pulp out of the zucchinis until they’re about 1/4 inch thick.
- Stir the zucchini pulp, bread pieces, olives, jalapenos, bacon bits, chili peppers, tomato, onion and cheese together in a medium bowl. Season with basil, seasoned salt and pepper.
- Stuff the mixture into the zucchini halves and wrap each half in aluminum foil.
- Grill each foil packet on the grill over indirect heat for 15 to 20 minutes.
