Holiday Recipe – Eggnog French Toast

Whether you are in your RV on a holiday trip or are staying home for the holidays, Christmas morning can be hectic, especially if you have children. Everyone will want to open their gifts; and you’re either trying to make something to bring to a family gathering or the gathering is at your house and you’re pulling your hair out trying to get everything done – and that includes breakfast.
Make a simple yet filling breakfast to keep everyone satisfied until it’s time for the big dinner. Instead of doing something “everyday” like scrambled eggs, try something that festive yet doesn’t take a ton of time. Even if you are in an RV you just picked up from Specialty RV Sales, this is easy to make and easy to clean up.
Eggnog French Toast
12 slices bacon or 12 sausage patties
2 eggs, beaten
1 ½ cups eggnog
1 ½ tablespoons ground cinnamon
1 teaspoon pumpkin pie spice*
12 slices French bread**
Fry the bacon on medium heat until it’s crisp and set it aside. Do not drain the pan. While the bacon is frying, whisk the eggs, eggnog and spices together until everything is well-blended. If you use a wide enough bowl, you won’t have to transfer the mixture to a shallow dish.
Leaving the burner on medium heat – if you are using an electric skillet, 300 degrees. Dip one slice of bread at a time in the mixture, ensuring both sides are coated. Place the slices in the pan or on the skillet. Cook until one side is browned, then flip it over and cook until the other side is browned.
Put finished pieces on a plate and cover with foil until all the pieces are done. Garnish with a dusting of confectioner’s sugar. Serve with butter and maple syrup if desired – or with just the powdered sugar.
*If you don’t have pumpkin pie spice, use 1 ½ teaspoons ground cinnamon, ¼ teaspoon allspice, ¼ teaspoon ground cloves and ½ teaspoon nutmeg.
**You can also use regular bread or Texas Toast.
